Happy Sunday to you all. Monday tomorrow (bleh) which means the week-end is almost over. Not fun.
But on the other hand, last day of June today which means two more months and we in the Southern Hemisphere are into the Spring months! I just can’t wait!
Today’s blog post is a health one (yippieee!!) And I have a yummy and oh so easy crumpet/pankcake recipe. I got this recipe from a friend in Australia. I found it so interesting. And so curious little me decided to try it out for lunch yesterday.
I made this as crumpets, as you can see in the picture. But if you wish, you can make them thinner and bigger to make pancakes. The ingredients are so, so simple. You don’t need flour, sugar, baking powder and whatever else goes into making a classic pancake or crumpet.
1 Organic Banana (you can add more bananas to make more crumpets/pancakes or according to your preference/taste)
Optional Ingredients: You may add these ingredients to your banana and egg mixture should you wish.
1 cup Rolled Oats
1 Tablespoon Pure Organic peanut/almond/cashew nut butter – whichever you prefer
All you need to do is put all your ingredients together into one bowl and mix well. If you have a blender, even better. Your oats will get mixed in very well. I included banana, eggs, oats and peanut butter into mine and into the blender my ingredients went.
Once you are satisfied with your mixture (pancake consistency), you are ready to cook ’em.
Heat some oil in a frying pan. I used virgin organic coconut oil – make sure to use a little bit just to be able to lightly prepare your crumpets/pancakes. You can also use organic pure olive oil.
Cook all your crumpets so they are golden brown on both sides. They burn quite easily so keep close guard and an egg lifter nearby to turn them over approximately every 30-40 seconds. Keep turning them over until you get a beautiful golden colour on both sides. Once ready, use the egg lifter to take them out of the pan and into a collecting dish/on a clean kitchen cloth – whatever suits.
Once they are all done, and should you wish, sprinkle some ground cinnamon and drizzle a little bit of pure raw honey over your crumpets/pancakes. Eat them with some apple slices (as I did) or some berries – whatever you choose. Or eat them plain. They are so delicious and packed with yummy goodness.
I will most definately be doing this very often. I just can’t get enough of them.
